Friends, I have a confession to make! I LOVE muffins and could cheerfully chow down on them all day everyday. But (what an appropriate preposition) while I cook them often for the teenager, I have to restrict my intake, for obvious reasons. I no longer have the metabolism of a teenager and I don’t want the bathroom scales to quiver with fear when I approach.
Anyhoo I digress. We’ve made a lot of sweet muffins recently – have you tried my Apple Oatmeal Muffins or Banana and Chocolate Chip Muffins with Black Currants or the easy peasy Healthy Banana Muffins with Chocolate and Coconut? Sometimes it’s good to ring the changes, so this Zucchini Oatmeal Muffins recipe is a savoury one.
True to form, it’s ridiculously easy to make these zucchini oatmeal muffins (simple enough for little kids) and they are proper crowd pleasers. I ‘road-tested’ these muffins at our church fete and they were all gone in minutes especially the ‘grown-up’ blue cheese ones…
Delicious served hot from the oven, with a bowl of homemade soup!
Healthy savoury zucchini oatmeal muffins with a hit of cheese and a hint of chilli
- 1 small courgette
- 4 oz self-raising flour
- 4 oz porridge oats
- 4 oz mature cheddar cheese or blue cheese
- 2 fl oz olive oil
- 6 fl oz milk
- 1 medium egg, beaten
- black pepper to season
- 1/2 to 1 tsp chili flakes (depending on how much heat you want)
Preheat the oven to 180°C
Place 12 muffin cases in a muffin tin
Grate the cheese and courgette into a large mixing bowl, then add in the flour, oats, oil and milk
Add the egg, pepper and chilli flakes and stir gently until just combined (don't over mix!)
Spoon the mixture evenly into the muffin cases
Bake for 20 minutes until they're golden, then remove from the oven and cool in the tin for 5 minutes
Transfer to a wire rack to cool completely or tuck in while they're still warm,
These muffins go brilliantly with homemade soup!
