Simple smashed avocado toast is an easy-peasy super healthy way to start your day! It’s a massively popular breakfast/brunch dish right now and I totally understand why – it’s delish! And so quick to make.
There are so many ways to enjoy avocado on toast, ranging from plain, simple and delicious (with just 2 ingredients) to getting creative with smoked salmon, bacon, eggs or roasted veggies. (Tip – try sun-dried tomatoes!!)
The 2 keys to a great avocado on toast dish are to use well-ripened avocados and to pick a really good bread with plenty of flavour. I buy my bread from the fabulous and famous Betty’s in Harrogate. Their artisan seeded rye bread is my favourite – it’s a tasty mix of rye, wheat and sourdough, packed with pumpkin, millet, sesame, linseed and sunflower seeds. It tastes amazing and it goes perfectly with smashed avocado. Yummy yum yum…
I always feel like a million dollars after eating avocado toast for breakfast – it’s my ultimate ‘get up and go’ weekend breakfast!
Try this tasty smashed avocado on toast recipe, drizzled with honey and topped with pistachios for the ultimate weekend brunch treat
- 2 ripe avocados
- 4 slices seeded bread/sourdough bread
- 2 tsp honey/agave nectar
- 1 handful shelled pistachios
Lightly toast the bread until it is just crisp
While the bread is toasting, halve the avocados, remove the pits and scoop out the flesh
Roughly mash the avocado with a fork and spread over the toast slices
Drizzle the honey over the avocado then sprinkle with pistachios
Serve immediately and enjoy!
